Breakfast Bars...

Good morning sisters and mom! I made these breakfast bars last night for Taylor and Jefferson this morning for breakfast and they were a hit. I couldn't keep them to myself!  Even though I don't have kids going back to school and I'm not preparing meals for tons of missionaries, I thought of you girls because I knew this would be a great recipe for both groups of kids! They are an easy make ahead thing for breakfast and are super yummy! Love you so much!

1/2 cup all purpose flour
1 cup whole wheat flour
1/2 cup brown sugar
1 1/4 cup rolled oats
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter cubed in small pieces ( I have used coconut oil too and it is great as well!)
1 large egg white, lightly whipped
3/4 cup favorite fruit (blueberries or raspberries work best. I've used frozen, you just throw them in the microwave for 30 seconds to thaw them a little!)
3/4 cup favorite jam - I usually use the same kind as the fruit I used, but I am sure anything would be good!

Preheat oven to 350 and spray or line a 13x9 pan with parchment paper
 
Whisk together dry ingredients in a large bowl. Add in 1/2 cup cubed butter and mix together with your hands until it resembles a crumbly mixture. Reserve 1 1/2 cup of this mixture in a separate small bowl. Next add in your 3/4 cup fruit and egg white to the original mixture and stir until combined.
Press this mixture on the bottom of your pan and bake for 10 minutes.

Spread your jam on the top of the crust and then sprinkle with the dry crumble you reserved to cover your layer of jam. Bake for another 30 minutes or until the top is light and golden brown. Let the bars sit at least 20 minutes before cutting (I have made mine the night before and then just refrigerate them, that works great!)
